can't find where to change font, size , color etc.

tired of closing mail, thinking i am in an internet tab, wish it would be able to freeze the top of the email, where it notes it is mail,

system is now slower since you have changed, more frustrating to navigate, more steps to activate an action, before you could just click on move, pick the folder and it went, now you have to activate it as well and wait

before I could paste into the email directly, now I have to create a file, and attach it, can't seem to put it directly into an email.
is there any way to go back to the former basic email, I know it has only been a couple of days, with these changes, but they are more frustrating,
